Chicken Prep

3 pounds whole chicken wings

Louisiana Cajun boil spice (heavy dusting)

Water (enough to cover wings)
Steps:

Place wings in a large cast-iron pan.

Add Cajun boil spice generously.

Cover with water and bring to a boil.

Simmer 2–3 hours covered, until chicken is tender and nearly falling off the bone.
Prep Your Sauce

1 stick unsalted butter

1 bottle Scorch’n Sunrise Hot Sauce (works with Holy Mole or Cry’n Cowboy too)
Steps:

Melt butter in a saucepan. Remove from heat.

Add a whole bottle of sauce, whisk together, and set aside.
Cooking Options

Smoked: Heat pit to 150–200°F. Smoke wings 1.5 hours. Crank the heat up, toss wings in sauce, return to grill 5–10 minutes.

Grilled: Grill wings over medium heat for 10–20 minutes until caramelized with grill marks.
